So many of you have asked me to post the recipes for the Breakfasts I post, to be very honest, I just layer whatever I find in the fridge or cupboards, some are a little more complex as I make the night before to allow the ingredients to blend together which creates richer flavours, check out my Favourite brekkie’s below, along with the full recipes.

Rice Pudding with Fruit Mix

Rice Pudding with Fruit Mix

This Homemade Rice Pudding breakfast is best prepared the night before, you need:

1 cup short grain brown rice

4 cups almond milk

1 teaspoon vanilla essence

1/2 teaspoon cinnamon

2 tablespoons of organic cane sugar



Acacia Honey.

Bring 1 cup of rice, 3 cups of almond milk,  cane sugar, vanilla, cinnamon to a rolling boil, Cover and turn to low and let simmer until all liquid has absorbed, this takes around 45 minutes, once absorbed add in one more cup of milk, allow to cool before layering into Mason Jar, I added Kiwi, Strawberries and honey to mine.



These pancakes are simply delicious and very easy to make, check out the recipes below

200g plain flour

180ml Milk and 180ml water

2 large eggs, lightly whisked

1 tbsp vegetable oil

Pinch salt


Greek Yogurt


Put the flour into a large bowl, make a well in the centre and pour in the milk and eggs. Give the liquid mixture a quick whisk before adding the flour. Continue to whisk until you have a smooth batter, add 1 tbsp vegetable oil and whisk thoroughly

Take a large frying pan, dip some kitchen roll in the oil and carefully wipe the inside of the pan. Heat the pan over a medium heat for a minute.

Add just under a ladleful of batter to the pan and immediately start swirling it round the pan to get a nice even layer.

Cook the pancake for approximately 30-40 seconds, Use a palette knife to lift the pancake carefully to look at the underside to check it is golden-brown before turning over. Cook the other side for approx 30-40 seconds and transfer to a serving plate.

Wait till the pancake is cool, and smother with greek yogurt, add strawberries & blueberries, roll them up and serve.

French Toast

An absolute favourite of mine and my childrens, you need:

2 x eggs

2 x slices of bread of your choice




Acacia Honey


Whisk both eggs together in a bowl, heat a frying pan with a dash of olive oil, add the bread slices to the egg mix coat with the egg all over, add to the pan and cook on both sides until a golden brown, add the chopped fruits and to sweeten more drizzle over acacia honey.

This is one of the simplest breakfasts ever! you need:

Organic Granola

Greek Yogurt



Acacia honey

Pistachio Nuts

Take a good sized mason jar, layer first with Granola, yogurt, fruits and pistachios, and continue layering until the jar is full, add a drizzle of honey and garnish with pistachios.

Chia Pudding with Fresh Fruits

Overnight Chia Pudding with Fresh Fruits

Chia is an awesome superfood, and delicious with fresh fruits, check out the recipe below:

1/3 cup white chia seeds

1 1/2 cups almond milk

2 tbsp acacia honey

1/2 tsp vanilla

Combine all the ingredients in a large mason jar, Cover with lid and give it a vigorous shake.

Chill for at least 4 hours, overnight is even better, the Chia seeds will expand and turn into pudding.

Serve cold with fruits, mango goes really well with this!
